Forget the 30 minute meals that I've seen on TV, that is WAY too long for a single mom of a three year old, and a soon to be one year old. I love cooking, I just do't have the time. I need fifteen minute meals that I can do with one hand when the other is occupied getting things for the three year old while holding the one year old. Oh yeah, they also need to be healthy... If you have any ideas, please post it in the comment section.
this one is super easy. get some salmon, put some dill on it, and lemon. wrap in foil, bake. side dish? cooked spinach (i use frozen!). heat it up with olive oil, and a little bit of garlic (garlic powder is a great time saver for this). Drew and Hannah love this meal. and since popeye eats spinach Drew always goes back for seconds on the spinach!
